I cells “taste” intraluminal contents leading to release of cholecystokinin (CCK). The image is an electron photomicrograph of a CCK-secreting I cell. The I cell is one of the enterochromaffin cells. The apical surface of the I cell faces the lumen of the intestine where it “tastes” specific luminal nutrients (i.e., peptides, amino acids and fatty acids). As discussed in the text, the characterization of the sensors responding to intraluminal stimuli is under active investigation. When it senses the specific nutrients, the I cell is activated and releases CCK from its basal surface. CCK can either act as a hormone to circulate to the pancreas and stimulate a secretory response or interact with sensory afferents containing CCK A (also known as CCK₁) receptors. The image demonstrates the interaction of CCK with sensory receptors that are part of the enteric nervous system (ENS) of the gut. These neural receptors are located in proximity to the I cells. Vagal nerves to the CNS carry the afferent sensory signals.
