Wine microbiota analysis during fermentation

The microbial load, diversity and composition of the wine microbiota is affected by wine type and environmental-stress factors

In order to improve the understanding of the composition, organization and temporal dynamics of the wine microbiota, the relative and absolute bacterial wine microbiota composition during the first week of fermentation was determined, including distinct red and white wine cultivars, by 16S rRNA gene amplicon sequencing.
