Research on the biological activity of flavonoids shows that they are powerful antioxidants. The paper discusses the physical and biological factors which are fundamental to the antioxidant properties of these compounds. Experimental, clinical and epidemiological studies have shown that consumption of large amounts of food rich in polyphenolic compounds (such as vegetables, fruit, juices, tea, spices) may prevent or support the treatment of the cardiovascular disease.
